This strawberry simple syrup is one of my favorite ways to use up extra strawberries or make the most of peak strawberry season. Simmering the berries with sugar and water infuses the syrup with bright, fresh strawberry flavor, adding an instant taste of summer to drinks, desserts, and even breakfast dishes.
Simple syrup is just equal parts sugar and water gently boiled together, but it’s also a blank canvas for all kinds of flavors. Strawberries are especially lovely here, giving the syrup a naturally sweet, fruity taste that works beautifully in cocktails, lemonades, iced tea, drizzled over pancakes, or spooned onto yogurt and ice cream.
All you need are three basic ingredients—strawberries, sugar, and water—and just a few minutes on the stove. It’s easy, versatile, and one of those small kitchen staples that makes everything it touches feel a little more special.
