The base is the same gooey, buttery classic we all know, but with a fruity twist. Instead of strawberry gelatin, I use freeze-dried strawberries, ground into a fine powder, and stir them right into the melted marshmallows and salted butter. The result is a sweet strawberry flavor that tastes fresh and real, not artificial, and gives the treats their pretty pink hue. Once the strawberry-marshmallow mixture is silky and smooth, it’s folded into crispy rice cereal, creating the perfect balance of chewy and crunchy.

Ideas for decorating strawberry rice krispie treats

  • Freeze-dried strawberries : While you’re forming your treats in the baking dish, you can press freeze-dried strawberries into the tops. You’ll see what this looks like in the pictures here. It’s subtle but really sweet!
  • White chocolate chips : You can add white chocolate chips to the tops of your treats or melt the white chocolate chips and then drizzle over your entire baking dish of treats.
  • Sprinkles : Sprinkles scream fun! You can toss some onto your marshmallow mixture and gently press down so that they stay in place. If you’re making these for Valentine’s Day, red, white, pink, or pearly sprinkles would be right on theme!
  • Different shapes : You can cut the rice krispie treats into different shapes, like hearts, flowers, or circles using cooking cutters. Know that depending on the size of your cookie cutter, this recipe may yield more or less treats.

Where to buy freeze-dried strawberries?

You can buy freeze-dried strawberries at many local grocery stores; however, if you can’t find them, you can also purchase them online .

Can I use fresh strawberries?

For this recipe, it’s not a good idea to use fresh strawberries. It will change the consistency of the recipe because they add too much water.

Strawberry Rice Krispie Treats Recipe

Ingredients

  • ▢ 16 ounces marshmallows (see notes)
  • ▢ 1 ½ cups freeze dried strawberries
  • ▢ ½ cup salted butter
  • ▢ 6 cups rice krispie cereal

Instructions

  • Line a 9×9 inch baking dish with parchment paper and lightly grease it with butter. Cut 1 cup of the marshmallows into small pieces – about the size of a mini marshmallow. 1 ½ cups freeze dried strawberries
  • Add the freeze-dried strawberries to a food processor and process until mostly powder. You should have about ½ cup. 1 ½ cups freeze dried strawberries
  • Melt the butter in a large pot over medium-low heat. Add the remaining marshmallows to the pot and turn the heat to low. Melt the marshmallows, stirring the pot occasionally. Remove the pot from the heat, add the rice krispie cereal, powdered freeze-dried strawberries, and the marshmallows you cut into small pieces and stir until combined. 16 ounces marshmallows, ½ cup salted butter, 6 cups rice krispie cereal
  • Transfer to the baking dish and gently press down – buttering your fingers helps prevent them from sticking. If you’d like, press a few freeze-dried strawberries into the top. Let the rice krispie treats cool for at least a half hour and then cut them into squares.
