Mimosas are why I brunch, and this strawberry mimosa is everything I love about the classic with a fun, fresh berry twist. I like to make it during peak berry season, when strawberries are at their sweetest and juiciest, for a drink that feels especially bright and celebratory.
It’s beautiful and surprisingly easy to make. The only additional step is blending the strawberries into the orange juice; the blender does all the work. You can easily customize the sweetness by adding a little honey or leaving it out entirely for a drier sip. Cheers!

The perfect mimosa ratio
A classic mimosa is equal parts fruit juice and sparkling wine, but you can adjust the ratio depending on your taste or your audience. If you prefer a stronger drink, add more sparkling wine. When we’re serving these strawberry mimosas to a crowd, we usually opt for more juice.
Make ahead and store
Can I make these strawberry mimosas ahead of time? You can definitely make the strawberry orange juice ahead of time and store it in the fridge in a sealed jar for up to 3 days. Give it a gentle shake before using, as it may separate during storage.
How long does it keep in the fridge? This recipe yields 2 cups of strawberry-orange juice, enough to make 8 mimosas. If you don’t use it right away, store any extras in the fridge for up to 3 days.

- ▢ 2 cups chopped strawberries (green tops removed)
- ▢ 1 cup orange juice
- ▢ ¼ cup honey (see notes)
- ▢ 1 bottle sparkling wine
Instructions
- Place the strawberries, orange juice, and (if using) honey into your blender and blend on high until smooth. 2 cups chopped strawberries, 1 cup orange juice, ¼ cup honey
- Strain the strawberry juice through a fine-mesh sieve.
- Pour about ¼ cup of the strawberry juice between champagne flutes then carefully top with sparkling wine. It will bubble up a lot so go slow! 1 bottle sparkling wine
