For this recipe, I take sour cream and chives—the classic baked potato topping—and fold them into creamy, comforting mashed potatoes. With just a handful of ingredients, they turn out rich and flavorful, perfect for almost any meal.

I start by boiling a mix of Yukon gold and russet potatoes until tender, then mash them with sour cream, butter, sea salt, and plenty of fresh chives. I usually grab a potato masher, but a potato ricer works beautifully if you want them extra smooth and velvety.

I finish them with a few grinds of black pepper and serve them warm alongside whatever’s for dinner. They’re simple, familiar, and exactly the kind of side dish I make when I want something dependable and cozy.

What to serve with sour cream and chive mashed potatoes

These creamy mashed potatoes are so versatile and pair well with chicken, pork chops, other meat mains, and just about any vegetable side. Sour Cream and Chive Mashed Potatoes Recipe

Ingredients

  • ▢ 3 lb potatoes (I like a mix of Yukon Gold and Russet)
  • ▢ 1 cup sour cream
  • ▢ 2 tablespoons butter
  • ▢ 2 teaspoons sea salt
  • ▢ ¼ cup minced chives

Instructions

  • Peel the potatoes and cut them into equal-sized chunks. Put the potatoes into a large pot and cover them with 1-inch of water. Boil the potatoes for 10-15 minutes (depending on the size you cut them), until they can easily be pierced with a knife. Drain the water from the pot. 3 lb potatoes
  • Add the sour cream, butter, and salt to the pot and let the butter melt. 1 cup sour cream, 2 tablespoons butter, 2 teaspoons sea salt
  • Mashed the potatoes using a potato masher then stir in the chives. ¼ cup minced chives
