This shrimp fajitas recipe is my go-to when I want a dinner that feels bright, fresh, and a little bit like summer—no matter the season. Juicy shrimp are quickly cooked with sweet onions and colorful peppers, then piled into warm flour tortillas or crisp lettuce wraps for an easy, satisfying meal.

The finishing touch is a drizzle of creamy cilantro lime ranch dressing, which ties everything together with a cool, zesty kick. Best of all, the whole thing comes together in about 20 minutes, making it perfect for busy weeknights when you still want big flavor on your plate.

What goes with shrimp fajitas

Fajitas are a meal in themselves. Some warm tortillas or a few lettuce wraps are all you really need. But toppings are fun. We like sour cream, salsa, grated cheese, shredded lettuce, and guacamole . Drizzling the fajitas in cilantro lime ranch is also delicious! Here are a few of our favorite things to serve with shrimp fajitas:

  • Roasted Corn and Avocado Salad with Chipotle Mint Dressing
  • Creamy Avocado Sauce
  • Mexican Pasta Salad
  • Spicy Mexican Rice
