The crisp, peppery bite of radishes that makes them such great salad toppers is mellowed out when you roast them, so the natural sugars stand out. They’re more mellow and sweet, and a super easy side dish with big-time pretty factor. And, especially when they’re coated in salty miso butter, so delicious! Roasted radishes are super versatile. For an easy dinner, pop them in the oven at the same time as chicken breast, use them as an alternative to potatoes, or serve them alongside other spring veggies for a delicious platter!

Preparing this familiar vegetable in a new way is a fun way to discover another side of radishes. Make this radish roast with just five ingredients:

  • Miso : Use red miso paste (white or yellow works well, too) to add umami depth to your radishes.
  • A bunch of radishes : Even though radishes are seasonally a spring vegetable, they’re readily available year-round. If you’re making this out of season the radish greens might not be fresh enough to use. That’s ok! Spinach works just as well.
  • Other ingredients: Oil, black pepper, and softened butter.

What kind of miso makes the best miso butter?

The most common miso types are white, yellow, and red. White miso has the mildest flavor, red the strongest, and yellow falls between.

We love the strong, pungent flavor of red miso. However, if you’re new to cooking with miso, white or yellow is probably your best bet. They are more versatile and can be used in most recipes. This might be a hot take, but we’ve found that any kind of miso works in any recipe! We’ve tried them all and used them randomly in many recipes, and they’re always delicious. When making this miso butter roasted radishes recipe, we dot the miso butter over the mostly cooked radishes so that it melts after a few minutes in the oven. Once it’s melted, toss the radishes to coat them in the butter.

What to serve with roasted radishes

The most simple way to enjoy these is by dishing them up as they are for a vibrant spring side dish! You can dollop some easy pesto over top. Radishes are a part of spring ‘s bounty, so serving them alongside other spring vegetables makes for a celebration of the season: roasted asparagus and whole roasted brussels sprouts can go in the oven at the same time.

Often, we pop some chicken breasts into the oven about 5 minutes before the radishes then pull everything out at the same time. Keep in the theme of spring and serve them beside some light and delicious lemon pepper fish or pan seared salmon . Top of spring quinoa salad bowls with some radishes, or make them a side next to a chicken feta burger , instead of potatoes.

Roasted Radishes with Miso Butter - 6

Ingredients

  • ▢ 2 bunches of radishes (about 1 lb)
  • ▢ 2 teaspoons oil (divided)
  • ▢ ½ teaspoon pepper
  • ▢ 1 tablespoon softened butter (vegan butter, if needed)
  • ▢ 1 tablespoon miso ( gluten-free miso , if needed)

Instructions

  • Preheat your oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper. Twist the greens off the radishes, put the greens into a bowl, and toss them with ½ teaspoon of the oil.
  • Cut the radishes in half, put them on the baking sheet and toss them with the remaining 1 ½ teaspoons of oil and the pepper and arrange them cut side down. Put them into the oven on the bottom shelf and roast for 12 minutes. 2 bunches of radishes, ½ teaspoon pepper
  • While the radishes roast, mix the butter with the miso in a small bowl. 1 tablespoon softened butter, 1 tablespoon miso
  • Add the greens to the baking sheet and dot the miso butter on top. Roast for 3 more minutes.
  • Remove the radishes from the oven and toss to mix them in the melted miso butter. Serve right away.
