Paired with crispy bacon, these once-humble little cabbages become a side dish even die-hard Brussels haters happily pile onto their plates.

Can I make roasted brussels sprouts with bacon ahead of time?
Yes! You can assemble the brussels sprouts and bacon 24 hours in advance. Cover the baking sheet and put it into your fridge until you’re ready to cook them.
Or par-cook them when your oven is busy cooking a turkey.
Up to 24 hours in advance, cook the brussels sprouts and bacon for 25 minutes. Let them cool, cover them, then put the baking sheet into your fridge.
Once you take the turkey out of the oven, put the brussels in for 15 minutes to finish cooking. By the time your turkey rests and is ready to be carved, the brussels will be ready, and they’ll taste freshly cooked.

- ▢ 2 lbs brussels sprouts (trimmed and cut in half if large)
- ▢ 2 teaspoons oil
- ▢ 1 teaspoon black pepper
- ▢ 3 cloves garlic (finely minced)

- Preheat your oven to 400 degrees Fahrenheit. Mix the brussels sprouts with the oil, pepper, and garlic, then place them on a rimmed baking sheet in a single layer. Cover them with the bacon pieces. 2 lbs brussels sprouts, 2 teaspoons oil, 1 teaspoon black pepper, 3 cloves garlic, ½ pound of bacon
- Roast for 35-40 minutes, mixing them halfway through. They are best when the brussels are very brown and the bacon is crispy.
