This rhubarb margarita tastes beautifully balanced—bright and tart like a classic margarita, but softened with a gentle, floral rhubarb flavor and a gorgeous rosy hue. The rhubarb is cooked into a lightly sweet syrup that blends seamlessly with fresh lime and tequila, so nothing feels overpowering. It still tastes unmistakably traditional, just fresher and a little more special.
I love serving it in a pink salt–rimmed glass for an extra pop of color, but the real magic is in the flavor. It’s tangy from the lime, lightly sweet, crisp, and incredibly refreshing. It’s easy to make with just a handful of ingredients, and any leftover rhubarb syrup is perfect stirred into other cocktails, mocktails, or even sparkling water. To make it alcohol-free, simply skip the tequila and add a splash of soda—it’s just as pretty and just as delicious.

How to make rhubarb ribbons
To make rhubarb ribbons, I use a paring knife to make long, thin strips of rhubarb. You could also use a vegetable peeler to shave the rhubarb stalks into thin strips.
Make ahead for a party
You can make the rhubarb syrup ahead of time, and it will store in the fridge in a sealed jar for up to 2 weeks. You can also mix the margarita ingredients in a large shaker or mason jar – just don’t add the ice until you’re ready to serve. I also like to rim the glasses so they’re ready to go before a party.
To scale this recipe, simply change ounces to cups. For example, 2 cups of white tequila, 1 cup of lime juice, and 1 cup of rhubarb syrup.

Ingredients
Rhubarb Syrup
- ▢ 8 cups chopped rhubarb (fresh or frozen)
- ▢ 3 cups water
- ▢ 2 cups sugar
Rhubarb Margarita
- ▢ Himilayan salt (see notes)
- ▢ 2 ounces white tequila
- ▢ 1 ounce lime juice
- ▢ 1 ounce rhubarb syrup
- ▢ Lime slices and rhubarb (to garnish)
Instructions
- Begin by making the rhubarb syrup. Simmer the rhubarb and water in a small, covered pot for 10 minutes. Crush the rhubarb gently with a spoon to release all of the flavor. Strain the syrup through a fine-mesh sieve then return the syrup to the pot. Add the sugar and stir until it dissolves, about 2 minutes. Let the rhubarb syrup cool completely before using it.
- Run a cut piece of lime around the rim of a rocks glass then dip the wet rim into salt. Fill the glass with ice.
- Add the tequila, lime juice, and rhubarb syrup to the glass and stir.
- Garnish with a lime slice and strips of rhubarb.
