This raspberry simple syrup is an easy way to add bright, berry sweetness to almost anything. Made by gently simmering raspberries with sugar and water, it’s simple, versatile, and endlessly useful.

This raspberry simple syrup is one of those small-but-mighty recipes that earns its keep in the fridge. It starts with raspberries simmered gently with sugar and water until the berries break down and their bright, jammy flavor infuses the syrup. The result is deeply berry-forward, with just enough sweetness to round out the flavor — vibrant, fragrant, and unmistakably raspberry.

I’ve tested this with both fresh and frozen raspberries, and they work equally well, making this an easy year-round staple. Frozen berries are especially handy when raspberries aren’t in season, and because they release their juices quickly, the syrup comes together fast. A gentle simmer is all it takes; there’s no need to rush or cook it hard — letting the berries do their thing gives you a clean, pure flavor without bitterness.

Once the syrup has cooled, I strain out the seeds and pulp and pour it into jars, ready to use whenever something needs a pop of berry sweetness. I love stirring it into cocktails and mocktails, drizzling it over pancakes or waffles, or spooning it over desserts like ice cream. It’s simple, flexible, and one of those recipes that makes everything you add it to feel just a little more special.

Tip: Save the sweet raspberry pulp to spoon over plain yogurt – it’s delicious!
