I love raspberries for their vibrant color and sweet, juicy flavor, and this raspberry mimosa is the prettiest way to show them off. It’s a rosy, celebratory twist on the classic mimosa that feels right at home on Mother’s Day, Valentine’s Day, or anytime you want to make an ordinary morning feel special.

This mimosa is easy to make with a blender and a few ingredients. Fresh raspberries are blended to a smooth puree, then topped with orange juice and a dry sparkling wine such as cava or prosecco. I sometimes add a little honey for sweetness, but it’s just as lovely without if you prefer a drier drink. Finish it with a sugar-rimmed flute and a few fresh raspberries for an extra-fancy touch. Can I make a mimosa ahead of time? You can definitely make the raspberry orange juice ahead of time and store it in the fridge in a sealed jar for up to 3 days.

How long does the raspberry juice last? This recipe yields 2 cups of raspberry-orange juice, enough for 8 mimosas. If you don’t use it immediately, store the extra in the refrigerator for up to 3 days.

Can I use a different sweetener? You could use maple syrup in place of the honey, but it will taste slightly caramelized. Agave syrup also works.

Ingredients

  • ▢ 2 cups raspberries
  • ▢ 1 cup orange juice
  • ▢ ¼ cup honey (see notes)
  • ▢ 1 bottle sparkling wine

Instructions

  • Place the raspberries, orange juice, and (if using) honey into your blender and blend on medium speed until the raspberries have broken down. 2 cups raspberries, 1 cup orange juice, ¼ cup honey
  • Strain the juice through a fine-mesh sieve, pressing on the pulp to squeeze out the juice.
  • Add ¼ cup of the raspberry juice to a flute glass then carefully fill the glass with sparkling wine. It will foam a lot so go slowly and pour against the side of the glass. Add a few raspberries to the glass to garnish. 1 bottle sparkling wine
