Pork chops: I prefer to use boneless pork loin chops that are at least 1″ thick for this recipe. If your chops are thinner, I recommend cooking them as I do in my thin pork chops recipe and then adding them to the sauce.

Sun-dried tomatoes: I know these guys aren’t everyone’s favorite. If you don’t love them, substitute diced tomatoes instead.

Storing and reheating instructions

Reheat: I like to slice the chops thin and reheat them on the stovetop over medium heat, adding a splash of water or stock to loosen the sauce. You can also reheat them in a microwave.

  • ▢ 4 1" thick pork loin chops
  • ▢ ½ teaspoon EACH: garlic powder, onion powder, salt, and pepper
  • ▢ 3 tablespoons all-purpose flour
  • ▢ 1 tablespoon EACH: butter and olive oil
  • ▢ 4 cloves garlic
  • ▢ 1 teaspoon Italian seasoning
  • ▢ ½ cup EACH: white wine and chicken stock
  • ▢ ¾ cup whipping cream
  • ▢ ½ cup chopped sun dried tomatoes
  • ▢ ½ cup grated parmesan cheese
  • ▢ Fresh basil (to serve)

Instructions

  • Season both sides of the pork chops with the garlic powder, onion powder, salt, and pepper. 4 1" thick pork loin chops, ½ teaspoon EACH: garlic powder, onion powder, salt, and pepper
  • Place the flour in a wide bowl and dredge each of the pork chops, shaking off any excess flour. SAVE THE REMAINING FLOUR. 3 tablespoons all-purpose flour
  • Heat the butter and oil in a large, non-stick skillet over medium-high heat. Add the pork chops and sear until golden, about 3-4 minutes per side. Remove them from the pan. 1 tablespoon EACH: butter and olive oil
  • Reduce the heat to medium, add the Italian seasoning and garlic, and cook for 30 seconds. Sprinkle the leftover flour from dredging the pork chops into the pan and stir. Pour the wine and chicken stock into the pan and bring it to a boil, scraping the bottom of the pan to remove any stuck-on bits. Add the whipping cream, and bring to a simmer. 4 cloves garlic, 1 teaspoon Italian seasoning, ½ cup EACH: white wine and chicken stock, ¾ cup whipping cream
  • Stir in the sun-dried tomatoes and parmesan cheese, and then return the pork chops to the pan. Let it simmer for 5-6 minutes, until the pork chops are fully cooked. Serve with fresh basil sprinkled over the top. ½ cup chopped sun dried tomatoes, ½ cup grated parmesan cheese, Fresh basil
