I never get tired of quick, easy dinners , which is exactly why this ground pork stir fry is on repeat in my kitchen. It’s a simple, satisfying dish made with ground pork, plenty of vegetables, and a homemade sesame-ginger sauce that’s savory, slightly sweet, and full of flavor. Ground pork might not be the first protein you think of for stir-fry, but it cooks quickly and adds richness that’s a welcome change from the usual chicken or beef.

Most of the effort here is just a bit of chopping, which makes this a great fridge-clean-out meal. I’ll brown the pork, add mushrooms and whatever quick-cooking vegetables I have on hand—green beans, carrots, bell peppers, onion, or even broccoli—then let everything cook until tender but still crisp. The sauce comes together easily with chicken broth, soy sauce, honey, toasted sesame oil, garlic, and ginger, and thickens just enough to coat everything beautifully.

This stir-fried ground pork is hearty, flavorful, and perfect for busy weeknights when I want dinner on the table fast. It’s great served over rice or noodles, and the leftovers make an excellent next-day lunch—sometimes even better once the flavors have had a little time to mingle.
