These grilled mushrooms are a flavorful and endlessly versatile side dish. They’re marinated in balsamic vinegar, soy sauce, and garlic and then grilled and drizzled with garlic butter. They’re easy to make with a few pantry ingredients, and they’re ready in just 20 minutes!

These garlic butter grilled mushrooms are anything but ordinary. They’re meaty, deeply satisfying, and packed with flavor, making them just as good alongside a grilled steak as they are piled onto a salad bowl.
I turn to this recipe whenever I want something easy that still feels special. They work beautifully as a simple side dish, but they’re hearty enough to stand on their own as a vegetarian main. I usually make them as written, but I’ll happily toss in fresh thyme, rosemary, or chives when I have them on hand to switch things up.

Ingredients needed
The ingredients list might be short, but the flavors are big in this grilled mushroom recipe. Here’s everything you need to make them:
- Balsamic vinegar : there are a lot of different types of balsamic vinegar out there that range in price and quality. We tend to use a mid-range balsamic vinegar, but any kind will do.
- Soy sauce : soy sauce adds umami and saltiness. Use gluten-free soy sauce if needed.
- Garlic : mushrooms and garlic are a heavenly flavor-match, so we use a generous amount. You can use less if it’s too much for your taste.
- Button mushrooms : we typically use regular, white button mushrooms, but you can also use cremini mushrooms. Make sure they’re whole (not sliced, and they’re firm and dry.
- Butter : we use butter to sauté the garlic which adds a lot of richness. You can use a dairy-free butter alternative or olive oil if needed.
- Sea salt : a generous pinch of sea salt makes all the flavors pop!

Why add garlic butter after the mushrooms are cooked
We experimented with different ways of using the garlic butter (marinating and basting) but neither method worked to bring out the garlic butter flavor. We found that drizzling the mushrooms with garlic butter after they’re off the grill makes them taste most like garlic butter mushrooms.
Can I use sliced mushrooms?
We tried using sliced mushrooms but found they were hard to work with, and it was hard to keep them on the skewers. To make mushrooms on a grill, cutting them in half is definitely the way to go!
What to serve with grilled mushrooms
These grilled mushrooms are such an easy and versatile side dish for barbecue season, and there are so many ways to enjoy them! Serve them as a side dish with everything from grilled chicken breasts , to juicy grilled pork chops , or with a grilled potato salad . Toss them into a salad bowl, tuck them in a sandwich, serve them over polenta, or make them part of a charcuterie board. The options are endless!

Grilled Mushrooms Recipe

Ingredients
- ▢ 2 tablespoons balsamic vinegar
- ▢ 1 tablespoon soy sauce (gluten-free if needed)
- ▢ 4 cloves garlic (very finely minced, divided)
- ▢ 2 lb button mushrooms (cut in half)
- ▢ 2 tablespoons butter
- ▢ A generous pinch of salt
Instructions
- In a large bowl, mix the balsamic vinegar, soy sauce, and half the garlic. Add the mushrooms and gently toss the mushrooms so they are coated in the marinade. Set aside on your counter for 30 minutes. 2 tablespoons balsamic vinegar, 1 tablespoon soy sauce, 2 lb button mushrooms
- In a small saucepan, melt the butter and add the remaining garlic and a pinch of salt. 2 tablespoons butter, A generous pinch of salt
- Oil your barbecue grill and preheat to medium. Skewer the mushrooms on kebab sticks. (See notes.)
- Grill the mushrooms for 5 minutes per side. When you flip them over, it is easiest to use two pairs of tongs. Set the grilled mushrooms on a plate and drizzle the garlic butter over the top. Serve immediately.
