This Greek salad dressing adds bright, tangy Mediterranean flavor to salads and so much more. It’s fresh, herby, and incredibly easy to make, using just a handful of pantry staples. I love homemade dressings because they taste cleaner and more vibrant, and you can easily adjust them to suit your taste.

The base is a good extra-virgin olive oil, which gives the dressing its rich, fruity backbone. A trio of red wine vinegar, balsamic vinegar, and fresh lemon juice creates a layered acidity that’s sharp but balanced, with just a subtle hint of sweetness. One of my favorite tricks is adding feta brine—the salty, cloudy liquid from the feta container—which brings instant depth and seasoning and puts something often discarded to very good use.

Fresh dill adds a bright, slightly anise-like note, while oregano brings that unmistakable Greek flavor. A clove of fresh garlic ties everything together with a savory kick. This dressing makes more than enough for one salad, so I keep the extra in the fridge and use it all week on grains, vegetables, legumes, or as a simple marinade for Greek-style chicken.

This Greek dressing is really versatile and can be used in so many ways. It’s a must on traditional Greek salad , but also tastes delicious on pasta salads, grain salads, or any green salad.

Can I use dried dill?

In a pinch! Fresh dill is much brighter tasting, but dried dill will still offer a lot of flavor. Use 1 teaspoon of dried dill.

Can I use fresh oregano?

Yes! I don’t often have it on hand, which is why I use dried oregano in this recipe. But if you have fresh, use 1 ½ teaspoons.

How long does Greek salad dressing keep in the fridge?

Store any leftover Greek salad dressing in a jar in the fridge for up to a week. The oil will solidify, so allow it to sit on the counter for 10-15 minutes to come to room temperature.

  • ▢ 2 tablespoons red wine vinegar
  • ▢ 2 tablespoons balsamic vinegar

  • Add all the ingredients to a medium-sized bowl. ¼ cup olive oil, 2 tablespoons red wine vinegar, 2 tablespoons balsamic vinegar, 2 tablespoons lemon juice, 1 tablespoon feta brine, 1 tablespoons chopped fresh dill, ½ teaspoon dried oregano, ¼ teaspoon sea salt, 1 clove garlic
  • Whisk until well combined. (If you’re not using the dressing right away, you can add the ingredients to a jar with a lid then shake the jar when you’re ready.)
  • Use the dressing right away or store it in your fridge in a jar for up to 10 days.
