When it comes to cooking salmon that’s moist and flaky, it can be tricky. It’s easily overcooked, which turns it rubbery and dry. We’ve got a tried and true method that makes perfectly cooked salmon every time. The secret: Low and slow is the way to go ! Try it once and you’ll be hooked on baking salmon this way! Plus, it gives you a few extra minutes to prepare the rest of dinner.

What is miso?

Miso is a traditional Japanese seasoning made from fermented soybeans, salt, and sometimes other ingredients. It’s paste-like in consistency and adds umami flavor to soups, marinades, sauces, and salad dressings. It comes in three main flavors and colors: white (shiro), red (aka), and yellow (shinshu).

Look for it in the refrigerator close to the tofu at most well-stocked grocery stores or Japanese or Asian markets.

Ingredients for miso salmon steaks

Here’s everything you’ll need to make ginger miso salmon steaks:

  • Salmon steaks – a salmon steak is cut cross-wise and includes pin bones. Just watch out for the bones when you’re eating as there tends to be a lot. If you’re serving this to kids you might want to make salmon fillets for them. You can cook them exactly the same way.
  • Miso paste – we recommend a yellow or white miso paste for this recipe for a milder miso flavor.
  • Other ingredients: Maple syrup, ginger, garlic, green onions and sesame seeds.

How to make slow baked miso salmon steaks

It’s easy to make miso salmon steaks in a few simple steps:

  1. We like to remove the scales from the salmon skin by holding the fish under cold running water and gently but firmly scraping the skin with a spoon. Afterward, pat them dry with paper towels and place them on your baking sheet.
  2. Mix together the miso seasoning then brush it evenly over the top of the salmon steaks.
  3. Bake the salmon steaks in the oven for up to 20 minutes. You’ll know it’s ready when it flakes easily. Remove the salmon from the oven and serve garnished with scallions and sesame seeds.

  • ▢ 1 tablespoon miso paste
  • ▢ 1 tablespoon maple syrup
  • ▢ 1 tablespoon grated ginger
  • ▢ 1 clove garlic (finely minced)

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper. Remove the scales from the skin by holding the salmon under cold running water and gently but firmly scraping the skin with a spoon. Dry the salmon steaks with paper towels and place them on the baking sheet. 4 salmon steaks
  • Mix the miso paste, maple syrup, ginger, and garlic in a small bowl. Spoon the paste evenly over the top of the salmon steaks. 1 tablespoon miso paste, 1 tablespoon grated ginger, 1 clove garlic, 1 tablespoon maple syrup
  • Bake the salmon steaks in the oven for 18-20 minutes, or until the internal temperature reaches 140 degrees Fahrenheit and the salmon flakes easily. Remove the salmon from the oven and serve topped with some green onions and sesame seeds. Green onions and sesame seeds
