We often eat these for lunch, but I also like to keep a bag stashed in the freezer for busy days. They’re perfect for a quick after-school snack or an easy dinner when you need something fast and satisfying.
From start to finish, these chicken bites take just under half an hour to make, and they’re even better if you double the batch and freeze the extras. Then you’ve got a ready-to-go snack you can pop into the oven in about 30 seconds flat. The spices are likely already waiting in your pantry, and the simple starch-and-spice coating bakes up golden and crispy, making these chicken bites a snack (or meal!) everyone’s happy to grab.

How to freeze chicken bites
This is one of the best freezer recipes. We almost always have some in our freezer cause I love being able to make something tasty for my daughter quickly. Here’s how to freeze these bites:
- Toss the chicken in the spices and starch.
- Now lay a piece of parchment paper on a baking sheet. This is to prevent the chicken from sticking to the tray when it’s frozen. Put the chicken pieces on the baking sheet, making sure they are not touching.
- Once the chicken is frozen, put the pieces into a freezer bag.
That’s it! The chicken bites will keep well in the freezer for more than a month.
Serving suggestions
I always like to dip chicken bites. Something as easy as ketchup works well, or you can try one of these dips:
- Chipotle Mayo
- Avocado Ranch Dressing
- Mayo Mustard Sauce
Usually, when I bake these, I throw some veggies on the tray. Broccoli, green beans, cauliflower, or some bell peppers all work well. They round out the snack or lunch and make it extra filling.

Ingredients
- ▢ ⅓ cup cornstarch
- ▢ 1 teaspoon EACH: paprika, garlic powder, onion powder, salt, and pepper
- ▢ 1 lb boneless skinless chicken thighs (see notes)
- ▢ 1 tablespoon olive oil
Instructions
- Preheat your oven to 425 degrees Fahrenheit. In a medium-sized bowl, mix together the starch with the paprika, garlic powder, onion powder, salt, and pepper. ⅓ cup cornstarch, 1 teaspoon EACH: paprika, garlic powder, onion powder, salt, and pepper
- Cut the chicken into bite-sized pieces then add 4-5 pieces at a time to the starch and spices. Coat them well then put them on a baking sheet. Repeat until all the chicken pieces are coated. 1 lb boneless skinless chicken thighs
- Drizzle the chicken with the oil and bake for 12 minutes. Turn the chicken bites over and broil for 5 minutes to make them crispy. 1 tablespoon olive oil
