For a standard 8-cup pitcher, combine 3 cups prosecco (about one bottle), 2 cups Aperol, and 1 cup soda water. Give it the gentlest stir—yes, I know this goes against everything I said earlier, but this method is all about simplicity over perfection—then pour into wine glasses filled with ice. Just be sure to mix the pitcher right before serving, as making it too far in advance will cause those lovely bubbles to disappear.
Garnish your spritz
If you order an Aperol Spritz in North America, it will almost always be garnished with an orange slice in the glass or an orange wedge on the rim. In Italy, however, it’s common to serve it with a few green olives on the side. A twist of lemon peel is another lovely option.
