This isn’t your average cobbler. Instead of the usual topping, I swap in cinnamon rolls, which bake up golden and slightly crisp on top while staying soft and doughy inside. That warm cinnamon flavor is the perfect contrast to the juicy peach filling, which gets a boost of vanilla and thickens into a luscious, syrupy layer as it bakes.
As it comes out of the oven, the peaches are bubbling and caramelized around the edges, and the cinnamon rolls are beautifully browned. A drizzle of icing over the top seals the deal, adding just the right amount of sweetness to every bite.

Ingredients
- ▢ 16 ounces sliced peaches (see notes)
- ▢ ¼ cup granulated sugar
- ▢ 1 tablespoon cornstarch
- ▢ 1 teaspoon vanilla extract
- ▢ ½ teaspoon ground cinnamon
- ▢ 12 ounces unbaked cinnamon rolls (see notes)
- ▢ 2 tablespoons melted butter
- ▢ Cream cheese icing (optional, see notes)
Instructions
- Preheat your oven to 350 degrees Fahrenheit and grease a 9” baking dish with butter. In a large bowl, stir together the peaches, granulated sugar, cornstarch, vanilla extract, and cinnamon and gently mix until the peaches are evenly coated. Transfer the peaches to your prepared baking dish. 16 ounces sliced peaches, ¼ cup granulated sugar, 1 tablespoon cornstarch, 1 teaspoon vanilla extract, ½ teaspoon ground cinnamon
- Cut the cinnamon rolls into ½” pieces and add them to a medium bowl. Drizzle over the melted butter and mix to combine. Spread the cinnamon rolls over the peach layer. 12 ounces unbaked cinnamon rolls, 2 tablespoons melted butter
- Bake for 40-45 minutes, or until the cinnamon rolls are golden brown and the peach filling is bubbling around the edges. Remove the cobbler from the oven and allow it to cool for 10 minutes before serving– this will help the peach layer set. Serve warm with a drizzle of icing (if using) and a scoop of vanilla ice cream. Cream cheese icing
