These adorable chocolate Easter nests are easy to make and a fun treat to celebrate the season. The bird’s nest cookies are made with dried chow mein noodles and chocolate and filled with mini candy eggs. They’re a cute and delicious Easter dessert!

Aren’t these the cutest things you have ever seen?!
Not only are they cute, but they’re also really tasty. The crunchy little noodles coated in chocolate have that sweet and salty magic to them. And any excuse to eat more mini eggs is a good one.
We don’t have a lot of cutesy kid recipes here, mostly because they tend to be fairly finicky. But these totally adorable Easter bird’s nest cookies are not finicky at all. These little things are as easy to make as they are to eat.
Key Ingredients

- Chow mein noodles – this might seem like an odd ingredient to eat raw, but they’re deliciously crunchy when coated in chocolate. And if you’ve ever tried our ramen noodle salad, you’ll know that some noodles are wonderful raw.
- Chocolate – we use both white chocolate (for the white nests) and dark chocolate (for the brown nests.)
- Peanut butter – if you don’t like peanuts or have an allergy, you can omit this.
- Mini eggs – while we love the star of the show, you could use jelly beans.

Variations to try
This is a really fun recipe to play with as there are all sorts of variations to try, and they always seem to turn out perfectly. Instead of making the bird’s nest cookies with chow mein noodles, try dry ramen noodles, cornflakes, puffed wheat cereal, or cheerios.
Instead of the white and dark chocolate, you can use butterscotch chips, mint chocolate chips, milk chocolate chips, a mix of the above… or try adding a few drops of your favorite extract like cinnamon, orange, or almond

Chocolate Easter Bird’s Nest Cookies Recipe

Ingredients
- ▢ 2 cups dried chow mein noodles (divided)
- ▢ 2 ounces chocolate chips
- ▢ 1 tablespoon all-natural peanut butter
- ▢ 2 teaspoons butter (divided)
- ▢ 2 pinches sea salt
- ▢ 2 ounces white chocolate
- ▢ ½ cup Mini chocolate eggs or jelly beans
Instructions
- Place parchment paper over a baking sheet. Divide the chow mein noodles evenly between 2 small bowls. 2 cups dried chow mein noodles
- Melt the chocolate chips, peanut butter, 1 teaspoon of the butter, and a pinch of sea salt either in your microwave or in a small pan over low heat. When it’s melted, stir it well then pour it over the chow mein noodles in one bowl. 2 ounces chocolate chips, 2 pinches sea salt, 1 tablespoon all-natural peanut butter
- Mix the noodles and chocolate well then create 4 small nests with the chocolate noodles on the prepared baking sheet.
- Next, melt the white chocolate with the remaining teaspoon of butter and a pinch of salt then pour it over the other bowl of chow mein noodles and toss to coat. Form into 4 nests on the baking sheet. 2 ounces white chocolate
- Set the baking sheet aside for at least 2 hours. You can also place the nests in your fridge to speed things up.
- Carefully remove the nests from the baking sheet using an offset spatula or knife. Place little chocolate eggs or jelly beans inside the nests before serving. Happy Easter! ½ cup Mini chocolate eggs or jelly beans
