- Sweet potatoes : Cut 2 sweet potatoes into ¼-inch strips to form your fries. They should all be pretty uniform so that they cook at the same rate.
- Cajun seasoning : Follow this recipe to make your own Cajun seasoning , or use a store-bought Cajun spice blend. Note that if you go with store-bought you won’t be able to control the spice or salt levels.

You sure can! Follow the recipe until it’s time to cook. At that point, put your air fryer to 400 degrees Fahrenheit and add the sweet potato fries in a single layer. Work in batches if needed, because you’ll want to leave some space between them. Cook for 10-12 minutes, flipping once.

- Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the sweet potato strips in a large bowl, add the olive oil and Cajun seasoning, and mix well. 2 medium sweet potatoes, 2 tablespoons olive oil, 1 ½ tablespoons Cajun seasoning
- Arrange the fries on the baking sheet so that they are in a single layer and not touching each other. Bake in the oven for 25-30 minutes, until they are soft with several crispy spots.
- While the fries are in the oven, make the blue cheese yogurt. In a small bowl mix together the yogurt, blue cheese, dijon, salt, and pepper. ⅓ cup Greek yogurt, ¼ cup blue cheese, 1 teaspoon dijon mustard, 1 pinch EACH: salt and pepper
- Serve the fries with a little chopped parsley on top and the blue cheese yogurt on the side. Chopped parsley
