  • ▢ 2 pizza crusts (see notes)
  • ▢ 1 lb brussels sprouts (cut in half)
  • ▢ 2 tablespoons olive oil (divided, plus more for drizzling on the pizza)
  • ▢ 1 large red onion (thinly sliced)
  • ▢ 1 pinch sugar
  • ▢ ½ cup parmesan cheese
  • ▢ 1 cup crumbled blue cheese
  • ▢ Balsamic glaze and Italian parsley (to serve)

Instructions

  • Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. Toss the brussels sprouts with 1 tablespoon of olive oil and a pinch of salt and toast them for 15 minutes. 1 lb brussels sprouts
  • While the brussels are roasting, prepare the caramelized onions. Add the red onion plus the remaining tablespoon of olive oil to a large frying pan over medium-high heat. Let the onions cook until they are soft, then lower the heat to medium-low, sprinkle a pinch of sugar over the top, and let the onions caramelize for another 5 minutes. 1 large red onion, 1 pinch sugar
  • Arrange the pizza dough onto baking sheets or a pizza pan. Drizzle the top of the crust with olive oil then sprinkle the parmesan cheese over top. Add the onions and brussels sprouts then dot with blue cheese. 2 pizza crusts, ½ cup parmesan cheese, 1 cup crumbled blue cheese
  • Bake the pizza for 12-15 minutes, until the cheese has melted and the crust is cooked. Serve the pizza with a little parsley on top and drizzled with balsamic glaze. If you’d like, you can add a little more blue cheese before serving. Balsamic glaze and Italian parsley
