10-Minute Tomato Avocado Toast with Parmesan

Ingredients

  • ▢ 2 teaspoons olive oil (divided)
  • ▢ 2 slices sourdough bread
  • ▢ 1 cup cherry tomatoes
  • ▢ ½ teaspoon minced fresh rosemary (see notes)
  • ▢ 1 pinch EACH: sea salt and pepper
  • ▢ 1 ripe avocado (sliced)
  • ▢ Shaved parmesan, basil, and balsamic glaze (to serve)

Instructions

  • Brush 1 teaspoon of olive oil on both sides of the bread. Toast the bread in a pan over medium-high heat until golden. Remove the bread from the pan. 2 slices sourdough bread
  • Saute the tomatoes in the remaining teaspoon of olive oil in a pan over medium-high heat for 3 minutes. As soon as the tomatoes soften, remove them from the heat and season with rosemary, salt, and pepper. 1 cup cherry tomatoes, ½ teaspoon minced fresh rosemary, 1 pinch EACH: sea salt and pepper
  • Slice half of an avocado and place it on a piece of toast. Mash it a little with a fork so that it sticks to the bread. Repeat with the other piece of toast and avocado half. 1 ripe avocado, Shaved parmesan, basil, and balsamic glaze
  • Top the toast with the sauteed cherry tomato, some shaved parmesan cheese, a little basil, and a drizzle of balsamic glaze.
